I have a feeling mangoes are going to be everywhere this summer… or at least, in my kitchen!
I’ve been popping them in my salads, snacking on them, and even dehydrating them into little mango roll-ups (which, by the way, has my daughter’s tick of approval). But the real winner has been these mango smoothies. Seriously, I can’t get enough. There’s just something about the combination of sweet, juicy mango with creamy goodness.
Plus, I love testing out different combos—mixing in seeds, leafy greens, or a handful of my favourite fruit. But this one is my go-to smoothie and only needs a few ingredients to keep it simple.
Ingredients:
- 1 ripe mango, peeled and diced
- A handful of spinach leaves
- 1 tablespoon chia seeds
- A splash of your favourite milk
- A couple of ice cubes
Method:
- Toss the mango chunks into your blender.
- Add the chia seeds, spinach, and a generous pour of milk.
- Blend until smooth and creamy.
For my daughter, I sometimes sneak in a banana (she loves it, but I’m not the biggest fan myself).
This smoothie is the perfect way to kick off a sunny day or cool down after a hot one—definitely a cup to sip and savour while you bask in the sunshine. Please note: the mango madness will continue as I’ve got more mangoey recipes coming soon.
